Homemade Cheese Recipe: High-Quality Protein, Rich in Calcium, and Additive-Free

Making cheese at home is easier than you think! This simple recipe uses natural ingredients to create a delicious, healthy cheese that’s a great source of protein and calcium, without any artificial additives. Perfect for spreading, slicing, or adding to your favorite dishes.

Ingredients

  • 1 liter of milk (whole milk for creamier cheese)
  • 2 tablespoons lemon juice or white vinegar
  • A pinch of salt (optional, for flavor)


Instructions

  1. Heat the Milk:
  • Pour the milk into a large pot and heat it over medium heat.
  • Stir occasionally to prevent scorching and heat until it just begins to boil (small bubbles will form at the edges).
  1. Add the Acid:
  • Once the milk reaches a gentle boil, reduce the heat to low.
  • Slowly add the lemon juice or vinegar, one tablespoon at a time, while stirring gently.
  • You’ll notice the milk curdling as the curds (solid) separate from the whey (liquid).
  1. Strain the Curds:
  • Remove the pot from the heat and let it sit for 5 minutes.
  • Line a colander with a clean cheesecloth or kitchen towel and place it over a large bowl.
  • Pour the curdled milk into the colander to strain out the whey.
  1. Rinse and Press:
  • Rinse the curds under cool water to remove the acidic taste.
  • Gather the cheesecloth around the curds and twist gently to squeeze out excess liquid.
  • For firmer cheese, press the curds with a heavy object for 15-30 minutes.
  1. Season and Shape:
  • Transfer the cheese to a bowl and mix in a pinch of salt if desired.
  • Shape it into a block or leave it crumbled, depending on your preference.
